Oh wow, stupid schools.
I'd think that something like a sandwich on whole wheat bread would be ok, just load on some healthy meats to it (try to get from deli not prepackaged). Also you could pack salad stuff as well, just take it easy on dressing.
Whole Wheat Bread
Lean Deli meats (not prepackaged)
Raw veggies
Fresh Fruits
Yogurt
Canned Tuna (you had to know this was coming)
Almonds
Apple Slices and Natty PB
Here is a good recipe that could work as well:

* 1 large (10-inch/25-cm) flour tortilla, wheat
* 1 tbsp. (15 mL) mayonnaise
* 1 tbsp. (15 mL) grated Parmesan cheese
* 4 oz. (114 g) sliced deli turkey
* 1 tbsp. (15 mL) chopped red onion
* 1/4 cup (50 mL) baby spinach leaves
* 1 oz. (28 g) sliced Provolone, Swiss or Cheddar cheese
* 2 thin slices tomato
* salt and pepper to taste
Cooking Instructions
1. In a small bowl, stir together mayonnaise and Parmesan cheese. Spread over tortilla to within 1/2 inch (1 cm) of the edges. Top with sliced turkey, red onion, spinach, sliced cheese and tomato slices, layered in the order listed in a row along the center one-third of the tortilla. Sprinkle lightly with salt and pepper to taste.
2. Roll the tortilla up tightly to enclose the filling, then cut in half crosswise. Eat immediately or wrap both halves in plastic wrap and pack in a lunch bag.

Two of my favorites for sandwiches are
1. buy a turkey breast season it how you want it, bake it and then slice it for your lunch meat . . . a bit time consuming but tasty
2. Get some boneless chicken breasts marinade them over night in seasoning of your choice then grill them up . . . cut in half and put them on 100% whole wheat bread. . . I typically cook up about 12-15 at a time and freeze them to save money
Sides
Another favorite of mine is to get some plain or vanilla yogurt (not sure maybe 2/3 C), ~.75-1 C frozen strawberries, and a scoop of whey . . . throw in a blender and mix it up. I usually freeze mine in the container I will eat it out of so that I have a ready made ice pack to keep my chicken sandwich cold until lunch AND by the time lunch roles around it is typically partially thawed so it's almost like a smoothie . . . mmmmmmDisclaimer: While I have an M.D. the views I express are not to be taken as medical advice under any circumstances.
